What am I gonna do with all these raspberries?
DON'T WASH THEM! Nothing is sprayed on plants or berries. They may crumble if washed.
1. Keep them cool right from the farm: bring a cooler with ice packs to the farm so your berries in pails stay firm and the juice doesn't leak.
2. Freeze them: lay out on parchment lined cookie sheets and freeze 3-4 hours, then move to ziploc bags in your freezer.
3. Jam: crush in pail and add sugar, lemon. Use your jam recipe or liquid Certo pectin. We make 250 ml jars to share and 500ml jars for home.
4. Pies: raspberry pie is the most decadent pie ever!! We like the lace top pie which saves crust, looks pretty, and minimizes boil over in the oven. Easier than your think! many how-to videos online
5. Baking: raspberries are great in scones, muffins or on cakes and pavlovas
6. Booze: fill a bottle or jar with raspberries and pour over Everclear til full. Leave sit 3 weeks. Sieve off berries. Make simple syrup. Sweeten to taste. Let sit 3 weeks. Voila! Raspberry Aperitif - many recipes online.

Best Raspberry Pie
prepare Tenderflake crust per recipe on container mix together 4 cups raspberries and 1 tbsp lemon juice in another bowl mix together 1/2 - 3/4 cup sugar, 1/4 tsp cinnamon, 2 1/2 tbsp tapioca. mix both together and spoon in to pie shell, crust on top. bake @ 425 F x 15 min, then 350F for 25-30min *I wrap foil on the edges and make a foil chimney to prevent over browning and bubbling over. 1 cup sugar 1 cup water boil till dissolved then let cool Best Raspberry Jam 4 cups raspberries, mashed 3 cups sugar 1/4 cup lemon juice combine raspberies and sugar let sit one hour bring to boil and stir in lemon stir boiling x 15-20 minutes, til thick. pour in hot jars * tip: if it is not thickening, try shredding an apple into pot - it is full of natural pectin!! |
Best Raspberry Lemonade
1 cup sugar 1 cup water boil til dissolved then let cool add : 1 cup lemon juice 3/4 - 1 cup raspberries strained thru sieve Mix together and add 4-6 cups water. Best Raspberry Scones 2 1/4 cup flour 1/2 cup sugar 2 tsp baking powder 6 tbsp cold butter 3/4 cup milk 3/4 cup raspberries, frozen is best mix together flour, sugar and baking powder rub in butter til crumbley slowly add milk and mix til stiff dough blend in raspberries gently (or add later after scones rolled out) roll dough to 7x7” cut 8 wedges brush with milk, sugar and bake on greased baking sheet. 425F x 15min til brown. cool. |
